Delicious and can be made ahead for mornings when you're in a rush. Mine usually has ~45g protein. Set up a tortilla + spread w/ chipotle mayo. In a bowl beat 1 egg + ½ cup egg whites + salt, pepper, seasoning of choice (I usually use italian, sounds... by wrapping in foil and placing in fridge for up to 3 days or freezer for longer.
